This is my go to breakfast on an extremely busy weekday day or on weekends when I am just heads down recording recipes. Its just perfect – takes 5 minutes but OMGGGG! The richness from coconut milk, oats, fresh strawberries and vanilla extract just makes it so so good. Try it out – its legit a fave!
INGREDIENTS – (serves 1)
- 1/2 cup coconut milk (or use any nut milk of your choice, unsweetened)
- 1/8 cup water
- 1 cup or 140gms fresh strawberries
- 1 tsp vanilla extract
- 1/2 cup ice
- 1/4 cup rolled oats
- 1/2 teaspoon good vanilla extract
- 1/4 cup raw cashews, unsalted
METHOD –
- Add ingredients to a blender listed in the order above then blend until very smooth.
